These are fantastic high welfare chickens. They’re fed a diet of maize which leads to a great depth of flavour, and beautiful look on the plate. 

The supreme is the breast (with the breast bone) and skin left on (for extra flavour). This cut is normally supplied exclusively to the catering trade, as it’s highly versatile - you can stuff it, roast it, fry it, or put it on a barbeque.  The supremes are packed in twos.
